Main Ingredients
- 3 Zucchini, medium, cut into very thin strips
Filling
- 5 oz Baby spinach, lightly steamed and drained
- 2 c vegan ricotta
- 0.5 tsp Garlic powder
- 0.25 tsp Black pepper
- 0.5 tsp Salt
Sauce
- 24 oz jar of tomato puree
- 2 clove Garlic, minced, crushed
- 2 tsp Dried basil
- 0.5 tsp Oregano
- 0.5 tsp Salt
- Pepper
- 1 c vegan cheese sauce

Directions

Preparing the Tomato Sauce
1. Add a small amount of water (2-3 tbsp) to a saucepan.
2. Heat on medium until water is simmering.
3. Add garlic and let simmer for a couple of minutes.
4. Add tomato purée and seasoning.
5. Simmer for 20 minutes.
Preparing the Zucchini
1. Lightly simmer or steam zucchini strips for 3-5 minutes or just until they are soft enough to roll.
Preparing the filling
1. Combine ricotta, spinach, and seasoning.
Putting it Together
1. Add a couple of spoonfuls of tomato sauce to the bottom of a 9x13-inch pan.
2. Layer 3 strips of zucchini slightly overlapping as shown in the video.
3. Add a spoonful of filling and roll.
4. Place the rolls one by one into your pan seam side down.
5. Drizzle cheese sauce over the top.
6. Bake at 375 for 20-25 minutes. If the zucchini releases water, just continue to bake until the water has evaporated.
7. Top with fresh basil and enjoy.
