Ingredients

Dumplings
- 1 pack Wonton wrappers, large, around 40
- 1 lb ground meat
- 3 oz shiitake mushrooms, minced
- 1 tbsp Ginger, grated
- 2 tbsp Light soy sauce
- 0.25 tsp White pepper
- 0.5 tsp Salt
- 1 egg white
- 3 stalks Scallions, finely chopped
- 3 tbsp Neutral oil, heated
Peanut Sauce
- 0.25 c creamy peanut butter
- 1 tbsp Light soy sauce
- 1 tbsp Rice vinegar
- 1 tsp Garlic, grated
- 0.333 c water, use more or less depending on the consistency of the sauce
Toppings
- peanut sauce
- chili oil
- crushed peanuts
- Scallions

Directions

Preparing the Wonton Filling
1. Combine ground chicken, minced shiitake mushrooms, grated ginger, light soy sauce, white pepper, salt, egg white, scallions, and heated oil in a large mixing bowl.
2. Stir in one direction with chopsticks until everything is well combined.
Folding the Wontons
1. To fold the wontons, place one piece of the wrapper on the palm of your hand and add 1 tbsp of filling in the middle (add 1 tsp of filling if using regular-size wrappers).
2. Wet all edges with water and fold in half, forming a triangle.
3. Seal both sides and wet one corner with water.
4. Bring the other corner over on top.
5. Press and seal tight.
Preparing the Peanut Sauce
1. Combine the listed ingredients for the peanut sauce in a bowl and mix well.
Cooking the Wontons
1. Since I used larger wonton wrappers with more fillings, cook them in boiling water over high heat until they float to the surface, about 2-3 minutes.
2. Continue cooking for an additional 2 minutes.
Serving the Wontons
1. Place the wontons in a bowl and add the peanut sauce on top.
2. Garnish with more chili oil, crushed peanuts, and scallions.
