- 1 c Sweet potato, cubed and roasted
- 1.5 c cauliflower florets
- 1 c Red cabbage, pickled
- 0.5 c Red onion, pickled
- 1 c Chickpeas, boiled
- 1 Carrot, cut into ribbons with a peeler
Garnish
- 0.25 c pomegranate seeds
- 2 tbsp pistachio
- 0.5 tsp Pepper, or to taste
Turmeric-Tahini Dressing
- 0.25 c Tahini, Lebanese brand for a liquid tahini
- 1 Lemon, juiced
- 0.5 tsp Turmeric powder
- 0.5 tsp Salt, or to taste
- water, as needed to make it thick and creamy

Directions

For the dressing
1. Start by mixing all the dressing ingredients in a small blender or whisking them together in a bowl.
For the salad
1. Assemble all vegetables onto a large platter.
2. Sprinkle with pomegranate seeds, pistachios for extra crunch, and cracked pepper.
3. Drizzle the dressing over the veggies and toss to coat.
