Ingredients

- 1.5 cup Whole wheat flour
- 1 tsp Baking soda
- 1 tsp Ground cinnamon
- 0.5 tsp Nutmeg
- 0.5 tsp Ground ginger
- 0.5 cup low fat greek yogurt
- 0.33333333333333331 cup Brown sugar
- 2 Tbs Canola oil
- 1 Egg
- 1 cup Carrot, grated
- 0.33333333333333331 Raisins
- 0.33333333333333331 cup Walnuts, chopped
- 4 Walnuts, halved

Directions

1. Pre-heat the oven to 180ºC/350ºF.
2. In a bowl, mix all the dry ingredients, while in separate bowl, whisk the yogurt with sugar, oil and egg. Add your liquid mixture into the dry one and whisk lightly just to integrate.
3. Add the grated carrots, raisins and chopped walnuts to the mixture, folding carefully so you don’t loose any air.
4. Split the mixture into a baking mold for 8 single muffins.
5. Bake the muffins for 7 minutes. Without removing from the oven, place a halved walnut on top of each muffin and keep baking for 7 to 9 minutes or until the muffins rise and are done in the center.
6. Let them cool and enjoy as a snack.
