Ricotta Mixture
- 8 oz Ricotta cheese
- 1 handful Fresh basil
- 4 clove Garlic, minced
- 3 tbsp Extra virgin olive oil
- 0.5 Lemon, juiced
- salt and pepper, to taste
Tomato Mixture
- 1.5 c baby tomatoes
- 3 tbsp Extra virgin olive oil
- 3 clove Garlic, minced
- salt and pepper, to taste
Baguette
- 1 French baguette
Garnish
- balsamic glaze
- 1 handful Fresh basil
- 1 pinch finishing salt

Directions

Preparation of tomatoes
1. Start by heating your oven to 375° F.
2. In an oven safe dish add baby tomatoes, extra virgin olive oil, garlic and salt and pepper.
3. Place tomatoes in the oven and roast for 25 minutes until soft.
4. Once your tomatoes have been roasting for 25 minutes, remove them from the oven and use a fork to mix everything together. Set aside.
Preparation of cheese mixture
1. To the food processor, add or cut the cheese, basil, garlic, salt and pepper and lemon juice.
2. Mix on high while drizzling olive oil into the mixture.
Preparation of baguettes
1. Spread your baguettes out onto a baking sheet and drizzle with olive oil.
2. Toast the baguettes until they are golden brown.
Final assembly
1. Once your baguettes are golden brown, remove them from the oven and add whipped ricotta and tomato puree.
2. Drizzle each baguette with balsamic glaze and top with fresh basil and finishing salt.
3. Enjoy!
