Ingredients

For Mochi
- 45 g Glutinous Rice Flour
- 10 g Corn starch
- 40 g Sugar
- 85 g Milk
- 10 g Butter
For Tanghulu
- 0.5 c Sugar
- 0.25 c water

Directions

Preparation of Mochi
1. In a pan, add glutinous rice flour, corn starch, sugar and milk; mix until combined.
2. Add butter; mix and cook on medium heat until a soft sticky form is formed. Let it cool a bit.
3. Use hand gloves and knead the mochi until stretchy.
4. Divide into small balls and coat with corn starch to prevent sticking.
5. Insert 4 mochi balls in a skewer and make as many as you can. Keep it aside.
6. Keep a cup of ice water ready.
Preparation of Caramel
1. In a pan, add sugar and water.
2. Don't mix or touch, let it cook on medium heat until it changes to light yellow color. (Keep an eye on it; because, it can burn pretty easily).
Final Steps
1. Once, it turns into slightly yellow/golden, turn off the heat and dip the mochis carefully; dip in the ice water immediately after dipping in the sugar. You have to do this step fast as the caramel tends to harden quickly.
2. Repeat for all the mochi bites and enjoy!
