Soup
- 4 lbs catfish
- 16 oz pineapple chunks
- 56 oz Chicken Broth
- 2 tbsp Tom Yum paste
- 2 tbsp tamarind powder
- 5 tbsp Sugar
- 1 tsp MSG
- 4 tbsp Fish sauce
- 1 tbsp chicken powder
Add-on Ingredients
- elephant ear
- beansprouts
- Tomatoes, cleaned, sliced into quarters
- Oyster mushrooms, cleaned, sliced into bite-size
- rice patty herbs
- okra
- fried garlic

Directions

Preparing the broth
1. In a 6 qt pot, add your chicken broth, 7 cups of water, pineapple chunks (with syrup), and tom yum paste.
2. Bring it to a boil (with the lid on).
3. Once the broth boils, add the seasonings: tamarind powder, sugar, MSG, fish sauce, chicken powder.
4. Allow it to bring to boil again.
Adding the catfish
1. Add your catfish steaks and allow them to cook for 15 minutes or until fully cooked.
2. Remove from broth.
Adding the vegetables
1. Add the fresh vegetables (elephant ear, beansprouts, tomato, king oyster mushroom, rice patty herb, okra).
2. The vegetables only take 3-4 minutes to cook.
Serving
1. Right before serving, top with 1 tsp of garlic oil.
