Ingredients

Main Dish
- 3 clove Garlic, minced
- 1 Shallot, minced
- 2 large tomatoes
- 2 Roma tomatoes, diced
- 20 oz fried tofu
- 1 c water
- 2 tbsp Fish sauce
- 0.5 tbsp Sugar
- 0.333 tbsp MSG
- 6 tbsp Oil
- Green onions, to garnish
Filling
- 0.5 lb Ground pork
- 0.5 tbsp Fish sauce
- 0.333 tbsp Sugar
- 0.25 tbsp MSG
- Black pepper

Directions

Preparing the Filling
1. Combine all the ingredients listed “for the filling” in a small bowl and set aside.
Preparing the Tomatoes and Tofu
1. Cut and remove the core of the 2 large tomatoes.
2. Dice the core and combine with the diced Roma tomatoes - set aside.
3. Stuff the 2 large tomatoes and fried tofu with the meat filling.
4. Set aside.
Frying the Stuffed Tomatoes and Tofu
1. In a large pan, heat 6 tbsp cooking oil over medium-high heat.
2. Once hot, shallow fry your stuffed tomato and tofu (meat side down first) until lightly brown.
3. Remove and set aside.
Preparing the Sauce
1. In the same large pan with excess oil from the shallow frying, add the minced garlic and shallots.
2. Sauté for 30 seconds.
3. Add your diced tomatoes and sauté for another minute.
4. Add 1 cup of water and your seasonings: fish sauce, sugar, MSG.
5. Then add back your fried tomato and tofu.
Simmering and Serving
1. Cover and allow to simmer for 20 minutes.
2. After 20 minutes, take off the lid and allow to simmer for 5 minutes.
3. Garnish with green onions and serve with rice.
