Preparing the Meat
1. Bring a 6 qt pot of water to boil.
2. While waiting, prepare the meat. Combine the ground pork, fish sauce, sugar, MSG, chicken bouillon, and black pepper. Set aside.
Creating the Meatballs
1. Once the water boils, create meatballs from the ground pork and drop them into the boiling water.
2. Allow to cook for 5 minutes. Once they float, they should be cooked.
Adding the Vegetables
1. Add your carrots and celery and allow to cook for another 5 minutes.
Cooking the Macaroni
1. In a separate pot, cook your macaroni according to package instructions.
Seasoning the Soup
1. Season your soup with additional fish sauce, sugar, and chicken bouillon as needed (I added 2 tbsp chicken bouillon, 1 tbsp fish sauce, and 1/3 tbsp sugar)
Assembling the Bowl
1. Assemble your bowl with macaroni, green onions, cilantro, black pepper, fried shallots, and ladle in the soup.
2. Add chili oil for an additional kick.
