Vegetables
- 0.5 Red pepper, diced
- 0.5 yellow pepper
- 0.5 orange pepper
- 2 Zucchinis, cut into large chunks
- 1 lb Oyster mushrooms
- 1 pint cherry or grape tomatoes
- smoked chipotle
- 3 c cooked quinoa

Directions

Prepare the Sauce
1. Prepare your sauce by combining all the sauce ingredients in a high-speed blender.
2. Blend until smooth.
Make Kabobs
1. Arrange an assortment of veggies and mushrooms on your skewers.
2. Place skewers on a parchment-lined baking sheet.
3. Brush generously with sauce.
4. Sprinkle kabobs with smoked chipotle seasoning.
Bake and Serve
1. Bake at 400 F for 20 minutes.
2. Add to a bed of prepared quinoa.
3. Top with extra sauce and chipotle seasoning if desired.
