Ingredients

- 1 bunch Kale, (washed)
- 1 Tbs Olive oil
- 2 Eggs
- 0.5 cup Japanese yams
- 1 tsp Garlic, minced
- 0.5 cup Cherry tomatoes, chopped
- 2 Tbs Green onions
- 0.25 Avocado
- 1 Tbs lite feta
- 1 tsp Red chili flakes
- Everything but the bagel seasoning
- Salt, (to taste)
- Pepper, (to taste)

Directions

1. Add 1 tbsp of olive oil to a sauté pan over low- medium heat. Once the pan is hot add chopped
2. garlic and let sauté for 3-4 minutes.
3. Add kale and sauté for 5 minutes. Add cherry tomatoes and yams and sauté for another 5
4. minutes. The potatoes I used were leftovers from the previous night so I didn’t need to cook them
5. for very long.
6. Remove veggies and plate. Wash off the pan and spray with cooking oil. Over low-medium heat,
7. crack two eggs into the center of the pan.
8. Add black pepper, red chili flakes and everything but the bagel seasoning to the eggs. Let sit for
9. 3-4 minutes or until the edges start lifting / become lightly brown.
10. Add the eggs on top of the sautéed vegetables. Garnish with avocado, crumbled feta and green
11. onions.
12. Serve and enjoy! xx
