Ingredients

For the legumes
- 6 Green tomatoes
- 2 Serrano peppers
- 0.5 Onion
- 2 clove Garlic
- 2 cup Water
- pinch salt and fresh black pepper
- 1 Tbs Olive oil
- 0.5 cup Chickpeas, cooked
- 0.5 cup Dried peas, cooked
- 0.5 cup Lentils, cooked
For the sopes
- 8 corn sopes
- 1 cup refried black beans
- 0.25 cup Red onion, chopped
- 0.25 cup añejo cheese

Directions

For the legumes
1. In a pot, add the tomatoes, peppers, onion, garlic and water. Bring to a boil and cook until the tomatoes are soft and turn in color. Drain and transfer everything to the blender, season with salt and pepper and blend until you get a homogenous salsa. In a pan, heat the oil and pour the sauce. Once ii boils, add the legumes and cook for a couple of minutes to prevent it from breaking apart.
2. Place to the side.

4. Heat the sopes in a pan or comal with a bit of oil. Spread with hot refried beans and serve each sope with some legumes in salsa verde.
5. Garnish with chopped onion and cheese.
6. Share and enjoy.
Tip:
1. You can serve the legumes in salsa verde as a main dish, with rice and vegetables to the side for a complete meal.
