Main Ingredients
- 2 Bell peppers, medium size red/yellow/orange
Filling
- 1 c cooked tricolor quinoa
- 1 c cooked black beans
- 1 c Sweet potato, cubed and steamed
- 0.5 tsp Smoked paprika
- 0.25 tsp chipotle powder
- 0.5 tsp Cumin
- 0.5 tsp Paprika
- 0.5 tsp Garlic powder
- 0.5 tsp Oregano
- 0.5 tsp Salt
Topping
- 2 c simple tomato sauce
- 1 Avocado, mashed
- 0.5 c vegan cheese sauce
Optional
- Red pepper flakes, to taste

Directions

Preparation of Peppers
1. Cut peppers in half and remove the stem and seeds.
Preparation of Filling
1. In a mixing bowl, combine all the filling ingredients and mix.
Assembling the Dish
1. Coat the bottom of the casserole dish with half of the tomato sauce.
2. Fill pepper halves with filling.
3. Add to the casserole dish and pour equal amounts of sauce over top of each pepper.
Baking Instructions
1. Cover and bake at 350F for 20 minutes, uncover and bake for an additional 15-20 mins or until peppers are soft.
Final Touches
1. Remove from the oven and top with mashed avocado and cheese sauce.
2. Optionally add red pepper flakes to taste.
3. Enjoy!
