Ingredients

- 6 ripe plantains
- 1 c Avocado oil, for frying
- 1 lb beyond meat
- 1 tbsp sofrito
- 1 tsp garlic paste
- 1 tsp adobo
- 1 tsp sazón
- 0.5 c onion and peppers
- 1 package vegan mozzarella
- vegan shredded cheese

Directions

1. Peel the plantains and cut into slices.
2. Fry the plantains over medium heat in the avocado oil. Set aside.
3. In a small frying pan, add the Beyond meat over high heat. Add the sofrito, garlic, adobo, sazón, onions and peppers. Mix together, and stir fry a few seconds. Reduce to low, cover and cook for about 10 minutes.
4. Cut the vegan mozzarella into slices.
5. Pre-heat oven to 350 degrees.
6. In a square oven safe pan, add a layer of plantains, then a layer of cheese, meat, cheese again, top with plantains and add optional shredded cheese on top.
7. Bake for 15 minutes until the cheese is completely melted.
8. Enjoy!
