- 200 ml water
- 1 tbsp Lemon juice, fresh

Directions

To make the mozzarella balls
1. Blend psyllium husk powder with water and let it sit for at least an hour until it becomes gelatinous.
2. Then, blend the psyllium husk mixture with soaked cashew nuts, lemon juice, and a pinch of salt.
3. Pour the mixture into a small round silicone ice cube tray and let it set in the fridge for at least two hours or overnight.
To serve the mozzarella balls
1. Once the mozzarella balls have set, pop them out of the ice cube tray.
2. Enjoy with cherry tomatoes, fresh basil, balsamic, olive oil, salt, and pepper.
