Ingredients

Dry Ingredients
- 2 c Almond flour
- 1.25 c oat flour
- 1 tbsp Poppy seeds
- 2 tsp Baking powder
- 1 tsp Baking soda
- 0.5 tsp Turmeric
Wet Ingredients
- 0.5 c Lemon juice
- 1 c Medjool dates, pitted
- 1 c plant-based milk
- 1.5 tsp Vanilla extract
- 1 tbsp Lemon zest
Glaze
- 0.333 c date paste
- 2 tsp Lemon juice
- 1 tsp Lemon zest
- 0.5 tsp Vanilla extract
- water, to thin to a pourable consistency

Directions

DRY INGREDIENTS
1. Combine all the dry ingredients in a bowl and whisk to combine.
WET INGREDIENTS
1. In a blender, combine dates, plant milk, lemon juice, and vanilla extract.
2. Blend until smooth.
3. Whisk in zest.
FINISHING THE BATTER
1. Add the wet ingredients to the dry ingredients.
2. Mix to combine.
3. Pour batter into a parchment-lined loaf pan.
GET IN THE OVEN
1. Bake for 30 minutes and reduce oven temperature to 325F.
2. Continue to bake for an additional 15-20 minutes, or until edges are browned and top is firm when pressed gently.
PREPARE GLAZE
1. Combine all the ingredients in a bowl and whisk to combine.
FINISHING IT UP!
1. Allow cake to cool in the pan until warm (about 20 minutes).
2. Remove and glaze.
3. Combine ingredients in a bowl.
4. Pour over top of your cake, slice, and enjoy!
