Ingredients

Burger
- 1 wheat-free burger bun
- 8 oz Maitake mushrooms
- 0.5 c Breadcrumbs
- 0.5 c plant milk
- 0.25 c arrowroot starch
- 0.25 c oat flour
- 0.5 c buffalo sauce
- Vegan Mayo

- Substitute Oyster mushrooms for Maitake mushrooms

Directions

Bread the Mushrooms
1. Combine arrowroot and oat flour in a bowl.
2. Dip mushroom pieces into liquid, then flour mixture, back in the aquafaba then bread crumbs.
3. Continue until all pieces are nicely coated.
4. Add breaded pieces to the air fryer basket and air fry at 350F for 10-13 minutes or until golden brown.
5. Alternatively, bake at 350F for 20 minutes.
6. Remove from the air fryer and brush lightly with oil-free, refined-sugar free buffalo sauce.
7. Return to the air fryer for an additional 5-7 minutes, or bake for an additional 10 minutes.
8. Remove from the air fryer, top with extra sauce if desired.
Assemble the Sandwich
1. Add some mayo to your bun.
2. Top with breaded buffalo mushroom.
3. Optionally top with coleslaw or other toppings of choice.
