- 1 tbsp avocado or olive oil
- 0.5 c onions and peppers
- 1 tbsp sofrito
- 1 tsp Healthy Rican Sazón
- 2 tsp Healthy Rican Savory Spice Mix
- 1 tbsp pimento stuffed olives
- 1 c jackfruit
- 2 c rice of choice
- 0.5 c peas and carrots
- 2 c water or broth of choice
- 0.25 c Fresh cilantro, chopped (optional)

Directions

Preparation of Ingredients
1. Heat your pot or "caldero" to medium/high heat, and add your oil, onions and peppers, sofrito, seasonings, and olives.
2. Mix well until the sofrito releases its aroma.
3. Add the jackfruit and mix well.
4. Add the rice and vegetables, cover with the water or broth.
5. The liquid should be 1/2" over the rice.
6. Try the liquid to make sure it has enough flavor and salt to taste.
7. You will want this liquid to be highly seasoned as it will determine the final flavor of the rice.
Boiling and Steaming
1. Allow the liquid to come up to a boil and for the rice to absorb all the visible liquid.
2. Once the liquid evaporates, stir the rice making sure you bring the rice on the bottom to the top, reduce the heat to low and cover.
3. Add the cilantro on top if desired.
4. Allow it to steam for 20-25 minutes.
5. It's done when all the liquid is absorbed and the grains are fluffy and fully cooked.
