Ube Champorado
- 1 c glutinous rice
- 3 c water
- 6 oz Coconut milk, half a 13.5 oz can
- 0.5 c ube halaya
- 0.75 can ube condensed milk
- 1.5 tsp ube extract
Toppings
- Cheese
- evaporated milk

Directions

1. Wash rice in a pot until the water runs clear.
2. Add in water and coconut milk. Bring to a boil. Make sure you keep stirring the pot so the rice doesn’t stick and burn to the bottom.
3. Once it’s boiling, change the heat to low and let simmer for 15 minutes or until the rice is cooked.
4. Add in ube halaya, ube condensed milk, and ube extract. Be sure to adjust to your sweetness level!
5. Garnish with grated cheese and evaporated milk.
