Ingredients

- 4 Tomatoes, medium sized, cored (550-600g)
- 2 red bell peppers
- 1 small head garlic
- 2 pieces of stale bread
- 0.5 c toasted nuts
- 1.5 tbsp sherry vinegar
- 1 tsp Smoked paprika, plus additional to taste
- 3 tbsp Olive oil, (30-45ml)
- Kosher salt, to taste

Directions

Preparation of Vegetables
1. Preheat an oven to 350°F (175°C) and line a baking sheet with aluminum foil or parchment paper.
2. Add your tomatoes, bell peppers, and garlic to the sheet pan, drizzle lightly with oil, and roast in the oven until charred, rotating after 20 minutes (about 45 minutes total).
3. Allow peppers and tomatoes to cool slightly before removing most of their skins.
Making the Sauce
1. In a food processor, add your stale bread along with your nuts and pulse until chopped into small pieces.
2. Add all remaining ingredients and pulse until a thick sauce forms, scraping down the sides as needed.
3. Taste and adjust salt, olive oil, and vinegar to your preference.
