Ingredients

Tostones
- 3 green plantains
- 1 c Coconut oil, refined, for frying
- pinch Salt, or adobo
Garlic Tomato Dipping Sauce
- 1 can Tomato sauce
- 2 tsp garlic paste
- pinch salt and pepper
- 1 Bay leaf

Directions

Tostones
1. Cut the corners of the plantain and open the plantain using a knife under running water or a bowl full of water.
2. Make a small incision on one of the ridges and start peeling.
3. Cut plantains in 2-inch pieces.
4. In a small frying pan, add about 1 cup of oil.
5. Heat the oil on medium.
6. Fry the plantain pieces on both sides.
7. Plantains should look golden brown and slightly cooked.
8. Soft enough to stick a fork in them easily.
9. Remove plantains from heat.
10. Flatten the plantains with a plantain press aka “a tostonera” or you can use 2 plates or the bottom of a can.
11. Bring back to the oil and fry on both sides again until golden brown.
12. Tostones should be soft/cooked on the inside and crunchy on the outside.
13. Add a bit of salt or adobo on both sides and serve immediately.
Garlic Tomato Dipping Sauce
1. Combine all the ingredients together in a saucepan.
2. Allow to simmer on low heat for 5 minutes.
