Ingredients

- 8 ounces tortellini pasta
- 2 cups Baby spinach, fresh
- 0.333 cup Sun-dried tomatoes, julienned, oil reserved
- 3 tbsp roasted red pepper and garlic
- 2 tbsp Feta cheese, crumbled
- 1 14-ounce can black olives
- 3 tbsp Red wine vinegar
- 1 tsp Honey
- 1 tsp Dijon mustard
- Salt, to taste
- Pepper, to taste

Directions

1. Bring a large pot of heavily salted water to a boil and cook pasta according to package instructions. Drain and transfer to a large serving bowl.
2. Add the spinach, sun-dried tomatoes, roasted red pepper, feta and olives on top of the cooked tortellini.
3. In a small bowl or measuring cup, whisk about 4 tablespoons oil from the sun-dried tomatoes, red wine vinegar, honey and dijon mustard until emulsified. Season with salt and pepper, to taste.
4. Pour on top of the pasta and vegetables and feta, and toss to combine. Serve warm or chilled.
