- 3 large tomatoes
- 4 Eggs
- 0.25 tsp Salt
- 3 tbsp Oil, divided
- 2 Scallions, separate white and green parts
- 1 tbsp Light soy sauce
- 0.5 tsp Salt
- 0.25 tsp White pepper
- 1 tsp Sesame oil

Directions

Preparation of Ingredients
1. Cut the tomatoes into chunks and chop scallions, separating the white and green parts.
2. Crack the eggs in a bowl and add salt.
3. Beat the eggs until blended.
Cooking Process
1. Heat a nonstick skillet over high heat and add 2 tbsp oil.
2. Add the beaten eggs and scramble until halfway cooked.
3. Transfer out and set aside.
4. Add the remaining 1 tbsp oil and the scallion whites.
5. Cook for 30 seconds until fragrant.
6. Add the tomato chunks and season with soy sauce, salt, and white pepper.
7. Cook until they are softened to your liking, about 3-4 minutes.
8. Add the eggs back and mix well.
Final Steps
1. Turn off the heat and drizzle with sesame oil.
2. Give it one last mix.
Serving
1. Serve with rice and garnish with green parts of scallions.
