Ingredients

Marinated Tofu
- 14 oz firm tofu
- 2 clove Garlic, finely chopped
- 1.5 inch Ginger, grated
- 1 c Yogurt, plant-based
- 2 tbsp Olive oil
- 1 tsp Cumin
- 1 tsp Turmeric
- 1 tsp garam masala
- 1 tsp paprika powder
- 0.5 tsp Salt, or to taste
Masala Sauce
- 0.75 c cashew nuts
- 3 Tomatoes, diced
- 1 Red onion, diced
- 1.5 c Tomato sauce
- 2 tbsp Tomato paste
- 1 tsp Cumin
- 1 tsp Turmeric
- 1 tsp garam masala
- 1 tsp paprika powder
To Serve
- 1 c Cilantro leaves
- Basmati rice
- naan

Directions

Marinating the Tofu
1. Marinate the cubed tofu with the yogurt, olive oil, and spices.
2. You can also do this ahead of time.
3. Bake in the oven at 350 degrees F for around 25 minutes.
Preparing the Masala Sauce
1. Prepare the masala sauce by sautéing the onion in olive oil.
2. Add garlic, ginger, tomato paste, and the spices.
3. Roast for a minute and add tomatoes, tomato sauce, and cashew nuts.
4. Let it simmer for 15 minutes, then cool it down and blend it until it's smooth.
Final Steps
1. Transfer it back to the pot, add the tofu cubes, and stir until the tofu is well coated.
2. Garnish it with cilantro leaves and serve it with naan and basmati rice.
