Ingredients

Tangzhong
- 4 tbsp Milk
- 1 tbsp Flour
Dough
- 0.75 c Milk
- 1.5 tsp yeast
- 3 c All purpose flour
- 2 tbsp milk powder
- 0.25 c Sugar
- 1 Large egg, room temp
- 5 tbsp Butter, softened, divided into 2 parts
- 0.5 tsp Salt
Assembly
- 2 Egg yolks
- 0.333 c Sugar
- 1 c full fat mascarpone cheese
- 0.5 c Heavy cream
- 0.5 c strong coffee
- 2 tbsp Cocoa powder

Directions

Prepare the donut dough
1. Prepare the donut dough using the recipe I’ve shared before.
2. Let it rise for about 60 - 90 min at room temperature until it doubles in size.
Roll and cut the dough
1. Roll the dough into a 1/2 inch thick sheet.
2. Cut out 4” circles.
3. Repeat until you have all donuts.
4. Rest for about 45 min in a warm place.
Fry the donuts
1. Heat 2-3 inches of oil in a wok over medium heat.
2. Once it has reached 350F, carefully drop in a test donut and cook for 2min per side.
3. Test for doneness and adjust timing as needed.
4. Fry all donuts accordingly.
Prepare the mascarpone filling
1. For mascarpone filling, whip egg yolks and sugar over a Bain Marie until they triple in volume.
2. Remove from heat and rest 5 min.
3. Then whisk in the mascarpone until combined.
4. Lastly, fold in the whipped cream.
Assemble the donuts
1. Slice donuts into half horizontally.
2. Brush them generously with coffee on both sides (or do a quick dip).
3. Fill the bottom half with mascarpone cream, cover with the top half, and pipe more cream dollops.
4. Cool for 2 hours.
5. Dust with cocoa powder and serve!
