Ingredients

Carrot Cake
- 225 g Carrot
- 190 g canned pineapple
- 290 g All purpose flour
- 30 g Corn starch
- 2 teaspoon Baking powder
- 0.5 teaspoon Baking soda
- 0.5 teaspoon Salt
- 2.5 teaspoon Cinnamon, ground
- 1.75 teaspoon Ginger powder
- 0.25 teaspoon Cloves, ground
- 0.5 teaspoon Nutmeg, ground
- 300 g Brown sugar
- 3 Eggs, large
- 200 g Vegetable oil
- 3 teaspoon Vanilla extract
- 110 g Yogurt
- 100 g Walnuts

Directions

Preparing the Dry Ingredients
1. In a bowl, sift the all-purpose flour, corn starch, baking powder, baking soda, salt, cinnamon powder, ginger powder, cloves powder, and nutmeg powder; keep it aside.
Preparing the Wet Ingredients
1. In a bowl, add soft brown sugar, eggs, oil, vanilla, yogurt, and crushed pineapple. (Strain the liquid from the canned pineapples and crush until smooth).
2. Mix until combined for a minute.
Combining Wet and Dry Ingredients
1. Add the pre-sifted dry ingredients.
2. Gently fold and mix until combined. (Don't overmix)
3. Add finely grated carrots and chopped walnuts.
4. Mix until combined. (Don't overmix)
Baking the Cake
1. Transfer to a parchment-lined pan.
2. Bake at 160°C for 35 minutes or until a toothpick inserted comes out clean.
