Ingredients

Meatballs
- 1.5 cups cooked lentils
- 1 Egg, use a flax egg if vegan
- 0.5 Onion, finely chopped
- 0.75 c Breadcrumbs, use gluten free if needed
- 0.25 c fresh chopped cilantro
- 2 tbsp Pumpkin Puree
- 0.5 tsp Salt
- pinch Black pepper
- 1 tsp red curry paste
- 1 tsp Soy sauce
- 1 clove Garlic
- juice from 1/2 Lime
Curry Sauce
- 1 can Coconut milk, full fat or light works
- 2 cloves Garlic, minced
- 0.5 Onion, finely chopped
- 3 tbsp curry paste
- juice from 1/2 Lime
- 0.25 c finely chopped cilantro
- 1 tbsp Soy sauce
- 1 tbsp vinegar

Directions

Preparation of Meatballs
1. Preheat oven to 425 degrees.
2. Add all meatball ingredients to a food processor.
3. Pulse a few times until partially blended. You want the dough to be rollable but still have some texture.
4. Roll out meatballs onto a sheet pan lined with parchment paper.
5. Bake for 30-35 minutes.
Preparation of Curry Sauce
1. While your meatballs are cooking, make your curry sauce.
2. Heat oil in a pan over medium heat.
3. Add onions and garlic and cook for 5 minutes.
4. Add all remaining ingredients to the pan.
5. Bring to a simmer and cook for 10-20 more minutes.
6. Add additional salt or pepper if desired.
Serving the Dish
1. Add rice to bowls (if using).
2. Divide out meatballs among the two bowls and top with the curry sauce.
3. Dig in.
