Ingredients

- 2 slabs Spare Ribs
- Smoker/grill
- Favorite BBQ sauce
- Aluminum foil
Homemade Rib Rub
- 1 c Brown sugar
- 0.5 c Kosher salt
- 4 Tbsp Smoked paprika
- 2 Tbsp Black pepper, coarse
- 1 tbsp Garlic powder
- 0.5 tbsp Onion powder
- 1 tsp Cayenne pepper

Directions

For the rub
1. Mix the ingredients together in a bowl, making sure to break down the brown sugar.
Preparing the ribs
1. Remove the skirt from the back of the ribs.
2. Remove the membrane or silver skin from the back of the ribs. Use a knife to pry it up, then peel it with a paper towel for grip.
3. Separate the rib tips from the rack of ribs by finding the longest bone and cutting a line down the entire rib. We will cook the tips the same way we do the rack.
4. Square up the rack by cutting the smaller ends. Throw this on the smoker as well for a mid-grill snack.
Seasoning the ribs
1. We need a binder. I’m using mustard. Don't worry, you won't taste the mustard in the finished product.
2. Spread the mustard over the ribs and season with the rub of your choice.
Cooking the ribs
1. Bring your smoker up to the temperature of 225°.
2. Add your ribs to it and let them cook for about three hours.
3. Make sure to spritz every three hours with a mixture of apple cider vinegar, and water or apple juice.
4. After about three hours, wrap the ribs with butter, brown sugar, and barbecue sauce on the side.
5. Once wrapped, put them back to the smoker, meat side down, and let run for about an hour and a half to two hours.
6. Place them back on the smoker unwrapped and add a thin layer of BBQ sauce on them and let them cook for about another hour.
7. You will know they are done when you pick them up with tongs at about the halfway point of the rib and they bend and you can see the meat begin to separate.
Finishing the ribs
1. Take them off and let them rest for 10-15 minutes before cutting into them.
2. Enjoy!
