Ingredients

Ramen Noodles
- 10 oz ramen noodles
- 2 shanghai bok choy
- 1 stalk Scallion, chopped
- 1 ramen egg
Meat Topping
- 1 tbsp Oil
- 8 oz Ground pork
- 1 tbsp Garlic cloves, finely chopped
- 1 tbsp Ginger, finely chopped
- 1 tbsp chili bean sauce
- 1 tsp Soy sauce
- 1 tbsp Shaoxing wine, or Sake
Seasoning Sauce
- 2 tbsp sesame paste
- 1 tbsp Soy sauce
- 1 tsp Rice vinegar
- 1 tbsp chili oil
Soup Base
- 2 c Chicken Broth
- 2 c unsweetened soy milk

Directions

Prepare Meat Topping
1. Heat oil in a wok over high heat.
2. Add garlic, ginger, and ground pork. Stir-fry until almost cooked.
3. Add chili bean paste, soy sauce, and Shaoxing wine. Stir-fry until well mixed, and the pork is cooked through.
Prepare Soup Base
1. In a soup pot, add chicken broth and unsweetened soy milk. Bring it to a boil.
Cook Ramen Noodles
1. Cook the ramen noodles according to package instructions.
2. Add bok choy halfway through the noodle cooking process.
Prepare Seasoning Sauce
1. Mix sesame paste, soy sauce, rice vinegar, and chili oil in a bowl.
Assemble the Ramen
1. Add 1-2 tbsp of the sauce mix to a serving bowl.
2. Pour in the hot broth.
3. Add the cooked noodles and top with the prepared meat, veggies, ramen egg, and scallions.
