Ingredients

- 1 cup tamarind pulp
- 1 pasilla chile
- 1 guajillo chile
- 0.25 cup Vegetable stock
- 0.25 Onion
- 1 clove Garlic
- pinch salt and fresh black pepper
- 2 Tbs Avocado oil
- 4 Chicken thighs
- 4 cup Baby spinach, washed and disinfected
- 1 Lemon

Directions

1. Blend the tamarind, chiles, vegetable stock, onion, garlic, salt and pepper together, until you get a thick and smooth adobo.
2. On a pot, heat up oil and pour in the adobo. Cook for a few minutes until it thickens and darkens.
3. Season the chicken thighs with salt and pepper; rub them with adobo and cook them in a hot grill for 4 minutes on each side until you get grill marks.
4. Cover them with a metal bowl or lid and finish cooking the chicken all the way.
5. Serve the thighs immediately and enjoy them with spinach and lemon juice.
