Ingredients

Tagliatelle Pasta
- 8 oz Tagliatelle
- 2 clove Garlic, finely chopped
- 0.5 tsp Chili flakes, adjust as desired
- 1 c dry sun-dried tomatoes
- 3 tbsp Olive oil
- 0.5 tsp Pepper
- 0.25 c Cheese, grated, plant-based to make it vegan
- 0.5 c Parsley, chopped

Directions

Boiling the pasta
1. Boil the pasta in salty water until it is al dente.
2. Be sure to save some of the cooking water.
Preparing the sauce
1. In a pan, heat the olive oil over medium-low heat and roast the garlic for a few minutes.
2. Make sure the temperature stays low to avoid burning the garlic and to be able to infuse the oil.
3. Add the chili flakes, sun-dried tomatoes, and some pasta cooking water (about 1/2 cup).
Combining and serving
1. Next, add the cooked pasta, cheese, and parsley.
2. Mix everything together well.
3. Finally, serve the dish with freshly cracked pepper and enjoy!
