Ingredients

- 1 c cooked bulgur
- 2 c Parsley, chopped
- 0.333 c Mint, chopped
- 1 c Cucumber, seeded & finely diced
- 0.5 c Roma tomatoes, finely diced
- 3 Scallions
- 2 clove Garlic, chopped
- 1.5 Lemon, just the juice
- 0.5 c Olive oil
- Salt, to taste
- Pepper, to taste

Directions

1. Cook bulgur, follow directions on the bag. I cooked 1/4 C of dry bulgur which made 1 full Cup.
2. Chop all fresh ingredients: parsley, mint, cucumber, tomatoes, scallions & garlic.
3. In a bowl, mix in all ingredients.
4. Add lemon juice, olive oil, salt & pepper to taste.
5. Mix well & enjoy!
