- 4 large sweet potatoes
- 1 lb ground meat
- 2 tsp Healthy Rican Adobo
- 2 tsp Healthy Rican Sazón
- 2 tsp Healthy Rican Sofrito
- 0.5 c Orange juice, optional
- 1 can Black beans
- 0.5 c Corn
- 0.333 c chopped cilantro
- 0.5 chopped red onion
- 1 clove minced garlic
- 1 c diced tomatoes
- 2 tbsp Olive oil
- 0.5 Lime, juiced
- 2 tsp Healthy Rican Adobo
- 2 tsp Healthy Rican Sofrito
- Sour cream, for topping
- Guacamole

Directions

Preparing the Sweet Potatoes
1. Rinse 4 large sweet potatoes (any color, I used purple in this video).
2. Poke holes in them with a fork, wrap in aluminum foil, and bake at 350 degrees for about 40-45 minutes.
Cooking the Meat
1. While the potatoes bake, cook 1 lb. of ground meat with Healthy Rican’s adobo, sazón and sofrito, with 1/2 cup of orange juice if desired (this just adds extra flavor to the meat).
2. About 2 tsp. of each seasoning.
Preparing the Bean Salad
1. For the bean salad, in a large bowl add; 1 can black beans, 1/2 cup corn, 1/3 cup chopped cilantro, 1/2 chopped red onion, 1 minced garlic clove, 1 cup diced tomatoes, 2 tbsp olive oil, 1/2 lime juiced, 2 tsp Healthy Rican adobo, and 2 tsp Healthy Rican sofrito.
2. Mix well.
Assembling the Dish
1. Once the sweet potatoes are cooked, open up in the middle, stuff with the meat and bean salad, and top with sour cream or guacamole.
2. Enjoy!!
