Ingredients

- 2 tbsp Unsalted butter, or coconut oil
- 0.667 c Brown sugar, packed
- 1 c Sweet potatoes, mashed, about 1 large potato
- 0.333 c Almond butter
- 1 tsp vanilla
- 0.5 c Cocoa powder
- 0.333 c all-purpose flour
- 1 tsp Baking soda
- 0.5 tsp Salt
- 0.5 c dark chocolate chips

Directions

Preparation
1. Preheat the oven to 350°F.
2. Line an 8x8 inch pan with parchment paper, leaving extra overhanging on the sides.
Creating the Mixture
1. Place the butter (or coconut oil) in a large microwave safe bowl and melt.
2. Whisk the melted butter with the brown sugar until well combined.
3. Then, stir in the mashed sweet potatoes, almond butter, cocoa powder, and vanilla.
Combining Dry Ingredients
1. In a separate bowl, whisk together the flour, baking soda, and salt.
2. Add the dry ingredients to the sweet potato mixture and mix until combined.
3. Add chocolate chips, reserving 1-2 tablespoons to sprinkle on top, and fold in.
Final Steps
1. Scrape the batter into the prepared baking pan.
2. Smooth the top and add the reserved chocolate chips on top.
3. Bake for 20-25 minutes or until a toothpick inserted in the center comes clean.
4. Remove from the oven and cool completely in the pan for about 30 minutes before lifting the parchment paper and transferring it to a wire rack to cool completely, about 1 hour.
5. Once cooled, cut into 16 squares.
