Ingredients

Chicken and Sauce
- 5 Chicken thighs, bone in or out & skin on
- 0.5 c sweet chili sauce
- 0.25 c Rice wine vinegar
- 1 Lime, fresh juice
- chicken bouillon powder
Rice
- 1.5 c Rice
- 4 c Chicken Broth
- 3 clove Garlic, minced
- 0.25 Red onion, diced
- Salt
- Pepper
- Olive oil
- 4 Star anise, cloves

Directions

1. Pat down chicken on both sides. Season with salt, pepper, and chicken bouillon.
2. Mix sweet chili sauce, rice vinegar and half the garlic in a small bowl.
3. Add sauce with the chicken thighs and let marinate for 30 minutes.
4. Add 1-2 tbsp of olive oil in a pan. Cook chicken skin side down first, 2-4 minutes on each side.
5. Remove the chicken and add the rest of the garlic, and onions. Sauté for 1-2 minutes.
6. Add rice and chicken broth. Bring broth to a simmer.
7. Add chicken, star anise and cover for 30-40 minutes until rice is fully cooked. Make sure you’re cooking this on low heat.
8. Top off with cilantro, fresh lime juice and enjoy.
