Ingredients

- 1.5 lb pork spare ribs
- 6 slices Ginger
- 2 stalks Green onion, cut into a few pieces
- 3 tbsp Chinese Shaoxing Wine
- 2 tbsp Oil
- 1 Bay leaf
- 1 Star anise
- 2 tbsp Sugar
- 2 tbsp Soy sauce
- 1 tsp Dark soy sauce
- 3 tbsp vinegar
- 0.25 tsp Salt
- Sesame seeds, for garnish

Directions

Blanch the Ribs
1. Start by blanching the rib pieces in a pot of cold water with 4 slices of ginger, 1 stalk of green onion (cut into a few pieces), and 2 tablespoons of cooking wine over high heat. Make sure the ribs are fully submerged in water.
2. Once the water starts to boil, reduce the heat to low-medium and let it continue to cook for another 5 minutes. Skim any impurities on the surface.
3. Remove the blanched rib pieces from the pot and rinse them clean.
Sear the Ribs
1. Heat 2 tablespoons of oil in a nonstick wok or pot over high heat.
2. Add the blanched ribs and sauté for a few minutes until the sides of the ribs are golden brown.
3. Add bay leaf, star anise, the remaining green onion pieces and ginger slices, and 1 tablespoon of cooking wine. Sauté over medium heat for another minute to release the fragrance.
4. Add sugar, soy sauce, dark soy sauce, vinegar, and salt. Continue to sauté for another minute.
Continue Cooking
1. Add hot water to the pot, just enough to level with the ribs. Bring to a boil then turn the heat down to low. Cover with a lid and let it simmer for about 50 minutes.
2. Uncover the pot and discard the ginger, green onions, bay leaf, and star anise. Turn the heat to high and let it cook for a few more minutes until the broth is reduced to a thick and sticky sauce. Stir often to ensure the ribs are evenly coated with the sauce.
3. Remove the pot from heat before the sauce dries out completely.
Plate the Ribs
1. Plate the ribs and garnish with some sesame seeds on top, if desired.
2. Serve warm with some white rice. Enjoy!
