Ingredients

- 8 ounces Shrimp, cooked and finely chopped
- 2 tbsp Mayonnaise
- 2 tsp Sriracha
- 1.5 c short grain rice
- 2 tbsp Soy sauce
- 2 tbsp Rice vinegar
- 1 Avocado, small, mashed
- Salt, to taste
- Pepper, to taste
- 2 Persian cucumbers, diced
- Cooking spray
- Sesame seeds, for serving

Directions

1. In a medium bowl, mix together shrimp, mayonnaise and sriracha. Set aside.
2. In another small bowl, combine the cooked rice with soy sauce and rice vinegar. Set aside.
3. In a third small bowl, mash the avocado with salt and pepper.
4. Spray a 1 cup dry measuring cup with cooking spray. Layer the shrimp mixture, then the cucumbers, followed by the mashed avocado and finally the rice mixture.
5. Carefully turn the cup upside down to turn the stack out onto a plate, lightly tapping the bottom of the cup if necessary. Sprinkle with sesame seeds and serve immediately! Makes 2 stacks.
