Ingredients

- 2 nori sheets
- 0.5 c cooked sushi rice
- 1 tsp furikake
- 0.5 Lebanese cucumber
- 4 slices salmon sashimi
- 0.25 avocado
- 1 tsp sriracha mayo
- 1 egg
- 0.5 c gluten free bread crumbs
- 1 c oil

Directions

1. Cook your sushi rice as per packet instructions.
2. Cut one nori sheet into a square (one quarter).
3. Lay down cling wrap and place large nori down. In the middle, add sushi rice, furikake, salmon, avocado, sriracha, remaining rice, and smaller nori sheet.
4. Fold inwards to make a square parcel. Wrap with the cling wrap and pack tightly into a circle shape. Leave in the fridge for 20 minutes.
5. Roll sushi burger in egg wash, breadcrumbs, and fry on each side for 4-5 minutes or until crisp.
6. Remove from the oil, cut down the middle, and serve with soy sauce.
