Ingredients

Ube Macapuno Cookies
- 1 box white cake mix
- 4 oz Butter, unsalted, room temperature
- 2 Large eggs
- 1 tbsp ube extract
- 1 jar macapuno

Directions

Preparing the Cookie Dough
1. In a bowl add the cake mix, butter, eggs, and ube extract and mix until it is well combined.
2. Scoop some cookie dough using an ice cream scooper, then with a spoon, make an indentation in the dough ball.
3. Place about half a tablespoon of macapuno into the hole and then close it up.
4. Place the dough onto a plate.
5. Repeat until all the cookie dough is used.
6. Cover in plastic wrap and place in the refrigerator for at least an hour.
Preheating the Oven and Baking
1. Preheat oven to 350 F.
2. Line a sheet tray with parchment paper or silicon baking mat.
3. Place cookie dough onto the baking tray with the dough being at least 1.5 inches apart.
4. Bake for 15 minutes.
Cooling and Serving
1. Let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
2. Best served warm.
