Ingredients

- 1 package Jumbo Pasta Shells
- 1 small Onion, Chopped small
- Garlic cloves, minced (as little or much as you want)
- 1 jar Marinara
- 15 oz Ricotta cheese
- 3 cups Mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 1 Egg
- 1 bunch Parsley, chopped
- Salt, measure with your heart
- Pepper, measure with your heart
- Dried oregano, measure with your heart

Directions

1. Preheat your oven to 375°.
2. Sauté the chopped onion in olive oil until the onions begin to turn soft.
3. Add in the garlic, salt, pepper and oregano, measure with your heart.
4. Sauté until you can smell the garlic.
5. Add in the marinara and bring to a simmer giving a stir from time to time.
6. Bring a pot of water to boil, and cook the shells according to their package.
7. Drain.
8. Fill the pot with cold water and return the shells to the pot.
9. In a large bowl, mix the ricotta, 2 cups of mozzarella, Parmesan cheese, egg, 1/2 of the parsley, some oregano, and stir to combine all ingredients.
10. In a large baking dish, pour the sauce and spread equally throughout the dish.
11. Stuff your shells! Use a tablespoon or an ice cream scoop to gently add the cheese into the shells.
12. Be careful not to overstuff them.
13. Add the shells to the baking dish in a single layer.
14. Cover the shells with the rest of the mozzarella cheese.
15. Loosely cover the baking dish with foil and bake in the oven at 375° for about 30 min or until the sauce is bubbling along the sides of the shells.
16. Remove the foil top and broil until the cheese gets a little crispy (1-3 minutes).
17. Remove from the oven, garnish with the rest of the parsley and enjoy.
