- 2 tbsp Kosher Salt (Namak)
Stuffing
- 1 tbsp Kosher Salt (Namak)
- 1 tsp Turmeric (Haldi)
- 1 tsp Red Chili Powder (Laal Mirch)
- 2 tbsp garam masala
- 1 tsp Pomegranate Seed Powder (Anar Dana)
- 2 pounds Ground Beef (Keema)
- 1 small Red Onion (Pyaaz)
- 0.5 c Chopped Cilantro (Dhania)
- 4 Green Chili (Sabz Mirch)
- 2 tbsp Crushed Ginger (Adrak)
Gravy
- 3 Large Yellow Onions (Pyaaz)
- 3 Large Tomatoes (Tamatar)
- 2 tbsp Crushed Ginger & Garlic (Adrak/Lahsan)
- 1 tsp Kosher salt
- 0.5 tsp Red Chili Powder (Laal Mirch)
- 0.5 tsp Turmeric Powder (Haldi)
- 0.5 tsp Ground Cumin (Zeera powder)
- 0.5 tsp Ground Coriander (Sokha Dhania)
- Cilantro for Garnish (Dhania)
- Garam Masala for Garnish
- 0.5 c Oil

Directions

Preparation of Bitter Gourd
1. Massage the salt all over the bitter gourd so the salt penetrates and brings out the moisture.
2. Let the bitter gourd sit for at least 45 minutes after salt is applied. This step is important as it takes away some of the bitterness. Best to keep it next to a sunny window.
3. After 45 minutes, wash it thoroughly so no salt is left behind. Dry it completely before stuffing.
Preparation of Stuffing
1. Make the stuffing immediately after salting the bitter gourd. You want it to sit for a bit so the ground beef gets fully marinated.
Cooking Instructions
1. You must fry the stuffed bitter gourd before adding it to the gravy. You want it to get completely cooked from the inside. The brown, crispy parts will give immense flavor to the entire dish.
