Ingredients

- 4 Russet potatoes
- 1 lb Ground beef
- 2 tsp adobo
- 1 tbsp sazón
- 2 tbsp sofrito
- 0.5 c Tomato paste
- 2 Bay leaves
- 4 tbsp Butter
- 1 c Broccoli, cooked
- 1 c Cheese, melted

Directions

1. Poke holes into the potatoes using a fork, wrap in aluminum foil and bake on 350°F for 30-35 minutes.
2. In a medium skillet, add the ground beef to high heat.
3. As the meat starts to cook, break up the meat into chunks.
4. Add the adobo, sazón, sofrito, bay leaves and mix well into the meat.
5. Cover, and reduce the heat to medium.
6. Allow to cook until the meat turns brown, approximately 10 minutes.
7. Drain excess fat if needed.
8. Add the tomato sauce and allow it to simmer for a minute or two.
9. Just make sure the meat doesn’t burn or stick to the bottom.
10. Remove from heat.
11. Using a butter knife, open the potatoes through the middle, add 1 tbsp butter for each potato, and break apart the insides like mashed potatoes.
12. Add the meat into the potatoes and top with broccoli and cheese.
