Ingredients

cupcake Ingredients
- 2 Eggs
- 120 ml Oil
- 120 grams Sugar
- 2 tsp Vanilla extract
- 0.5 tsp Baking powder
- 140 grams Cake flour
- 0.25 tsp Baking soda
- 3 tbsp Buttermilk
Strawberry coulis ingredients
- 250 grams Strawberries
- 100 grams Sugar
Cream Cheese Icing
- 150 grams Butter, softened
- 240 grams Cream cheese
- 2.5 tsp Vanilla extract
- 600 grams icing sugar
Graham Cracker Crust
- 250 grams graham crackers, crushed
- 75 grams Butter, melted

Directions

Method
1. Whisk the eggs with the sugar until pale in colour. Mix in the oil and the vanilla. Sift the dry ingredients into the bowl. Fold in the dry ingredients.
2. Fold in the buttermilk. For the graham cracker crust, mix in all the ingredients and press 1/4 cup into each cupcake liner.
3. Scoop the cupcake batter into each cupcake liner (3/4 full) and bake at 350F for 20-25 minutes. Let cool for at least 30 minutes.
4. Blend the strawberries until they are smooth. simmer with the sugar and let cool before using.
5. Beat the cream cheese and the butter together until it is smooth and fluffy. Add the icing sugar and fold until it is all mixed together. Add vanilla extract at the end.
6. To assemble, create a hole in the middle of the cupcake with an apple corer, only cutting 3/4 through and scoop in the strawberry coulis. cut a piece of the cake to cover the top of the hole. Decorate with cream cheese icing on top and enjoy!
