Ingredients

Oats
- 2 cups oats
- 1 cups date paste
- 1 tsp Cinnamon
- 1.5 tsp vanilla
- 2 cups Strawberries, chopped
- 2 tbsp ground flax
- 1.25 cups plant milk
- 0.25 cups nut or seed butter
- pinch Salt
Cream Cheese Topping
- 0.75 cups raw cashews
- 0.25 cups plant milk
- 3 Medjool dates, pitted
- 2 tsp Lemon juice
Strawberry Coulis
- 2 cups frozen strawberries

Directions

BLEND
1. Blend plant milk, date paste, vanilla, and nut/seed butter.
COMBINE
1. In a bowl, combine oats, ground flax, and cinnamon.
2. Combine wet and dry ingredients.
3. Mix in chopped strawberries.
BAKE
1. Pour into a parchment-lined 8-9 inch pan.
2. Bake at 375 F for 30 minutes.
PREPARE THE TOPPING
1. Cream cheese frosting: Combine all ingredients in a high-speed blender.
2. Blend until smooth.
3. Strawberry Coulis: Add frozen or fresh strawberries to a pot and simmer until strawberries break down and thicken (approx. 30 minutes).
4. Blend until smooth.
FINISH AND SERVE
1. Add cream cheese frosting and strawberry coulis to the top of the baked oats.
2. Serve and enjoy.
