Tomato, Cherry, and Peach Salad
- 2 lbs tomatoes
- 1 lbs cherries
- 1 lb peaches
- 1 shallot
- 0.5 c pistachios
- 4 red thai chilies
- 0.5 c mint
- 3 tbsp chili crisp
- 2 tbsp extra virgin olive oil
- 2 limes
- Kosher salt, to taste
- 2 c ricotta

Directions

Toasting the pistachios
1. Turn on your broiler and toast pistachios in a small sheet pan, set aside.
Preparing the dressing
1. Combine chili crisp, shallots, chilis, olive oil, lime juice & pistachios in a small bowl, whisk to combine.
2. Season with salt.
Preparing the salad
1. Combine tomatoes, peaches, cherries, mint and dressing in a large bowl.
2. Mix well and season to taste with salt.
Serving the salad
1. Serve over a plate of ricotta and garnish with more toasted pistachios.
