Ingredients

- 5 lbs Dungeness crab
- 3 tbsp crab paste
- 1.5 tbsp Oyster sauce
- 2 tbsp Fish sauce
- 1 tbsp Sugar
- 1 tbsp Sesame oil
- 1 stalk Lemongrass
- 1 Garlic, don't be shy I used a lot
- 1 Shallot
- 5 kaffir lime leaves
- 2 bunches Green onion
- Cornstarch

Directions

1. Clean and prep your crab.
2. Add 1 tbsp of cornstarch to the crab and mix well.
3. Cut all fresh veggies and set aside.
4. In a small bowl mix the sauce ingredients: crab paste, sugar, fish sauce, oyster sauce, and sesame oil. Taste and make adjustments if needed.
5. In a wok or deep pan, add oil and sauté garlic, shallots, and lemongrass.
6. Add sauce and cook that for about 1-2 minutes.
7. Add crab tomalley, kaffir lime leaves and mix well.
8. Add crab pieces and mix well.
9. Cover and steam for about 15 minutes.
10. Add shallots and steam for another 5 minutes.
11. Serve fresh with rice and crack sauce on the side (optional).
Tip
1. When cleaning the crab, keep the tomalley (the dark yellow part inside the shell when you open the crab to clean it) for the sauce.
