Ingredients

For the dip
- 1 cup ricotta cheese or cream cheese
- 0.5 cup Parmesan cheese, grated
- 1 cup Manchego cheese, grated
- 0.5 cup low-fat cream
- 0.25 cup Dry white wine
- 4 cup Spinach, chopped and blanched
- 4 Artichoke hearts, chopped
- Spray oil
To serve
- 1 Baguette, sliced

Directions

1. Pre-heat the oven to 200°C/400°F
2. In a bowl, add the ricotta and beat until softened. Stir in the parmesan, Manchego, cream, wine, spinach and artichoke hearts; mix to incorporate.
3. Lightly spray a baking pan with oil and add the mixture in.
4. Bake for 10 minutes or until grated and fully melted.
5. Lay some of the baked dip on baguette slices, share and enjoy.
