Chicken
- 1 Chicken breast
- 3 slices Ginger
- 1 Scallion
- 1 tbsp Shaoxing wine
- crushed peanuts
- chili oil
Chili Sauce
- 1 tbsp Garlic, minced
- 1 tbsp Thai chili peppers
- 1 tbsp Sichuan chili flakes
- 3 tbsp heated oil
- 2 tbsp Light soy sauce
- 1 tbsp Chinese black vinegar
- 1 tsp Sesame oil
- 1 tsp toasted sesame seeds
- 0.5 tsp Sugar

Directions

Preparing the Chicken
1. Add the chicken breast to a pot of water along with Shaoxing wine, ginger, and scallions.
2. Bring it to a boil and reduce the heat to low, cover and let it simmer for about 10 minutes or until the chicken is fully cooked.
3. Transfer the chicken to an ice bath.
4. Let it sit in the ice bath for a few minutes to cool down and stop the cooking process.
5. Shred the cooked chicken into thin pieces using your hands or forks.
Preparing the Chili Sauce
1. In a separate bowl, prepare the chili sauce by combining the listed ingredients.
2. Pour the sauce over the shredded chicken and mix well.
Final Steps
1. Add chopped cucumber and cilantro to the chicken mixture.
2. Mix everything together to incorporate the flavors.
3. Garnish with crushed peanuts and drizzle some extra chili oil on top for added spiciness.
