Roasted Potatoes
- 5 Potatoes, medium-sized
- 3 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 0.25 tsp Chili flakes, or to taste
- 2 tbsp Parsley, chopped (optional)
- 1 c Sriracha Chilli Mayonnaise

Directions

Preparation of Potato Wedges
1. First, peel and slice the potatoes into wedges. You can make 8 wedges per potato.
2. Boil them in saltwater for about 7 minutes. Make sure not to overcook them. They should still keep their shape.
3. Once they are done, let them cool and dry with a kitchen towel.
Coating and Baking
1. Next, coat the wedges with olive oil, chili flakes, or your desired spices, and pepper.
2. Once they are coated, bake them in the oven at 395 degrees F for about 35 minutes until they are lightly browned and crispy.
Final Touches
1. Finally, sprinkle the wedges with chopped parsley and salt.
2. Do note that they are best consumed immediately to maintain their maximum crispiness.
