Ingredients

- 0.5 lb Shrimp, peeled
- 0.5 c Cornstarch
- 0.25 c Flour
- Salt
- Pepper
- Paprika
- Garlic powder
- Onion powder
- 1 Egg
- Green onion, topping
Sauce
- 0.333 c mayo
- 2 tbsp Sriracha
- 2 tsp Soy sauce, go light on this, too much will make it salty
- chili oil

Directions

Preparation of Shrimp
1. Clean and peel your shrimp if needed.
2. In a bowl, add your dry batter: cornstarch, flour, and seasonings. Mix well and set aside.
3. Add the same seasoning to your shrimp (salt, pepper, paprika, garlic powder, onion powder). Mix well and set aside.
Preparation of Wet Batter
1. In a small bowl, crack 1-2 eggs and mix well.
2. Drop your shrimp in the wet batter, then the dry batter (coat well), remove from batter and set aside. Do this for all the shrimp.
Preparation of Sauce
1. Mix Mayo, sriracha, soy sauce, and chili oil in a bowl. Mix well and taste to add anything else if needed.
Cooking the Shrimp
1. In a pan, heat up some oil, and cook the shrimp for about 2-3 minutes. Make sure your oil is nice and hot so the shrimp gets golden brown.
2. Remove from oil and lightly salt. Then add sauce and mix well.
3. Top it off with green onions and drizzle some chili oil on top.
